Green Turmeric: How to make it with ingredients... Click here to know


 

  • Ingredients for turmeric for 5 people:

1. Fresh green turmeric: 400 grams.

2. Green garlic: 800 grams.

3. Green chillies: 100 grams.

4. Ginger: 50 grams.

5. Coriander: 50 grams.

6. Tomato: 2 pcs.

7. Peas: 100 grams.

8. Curd: Amul small cup (less sour)

9. Buttermilk: Amul two pouch

10. Ghee: 300ml

11. Spices: Salt, chilli powder, turmeric  powder (less), coriander powder, black pepper powder, garam masala powder.

12. For Seasoning: cumin, bay leaf or sweet neem.

13. Equipment: Make in a non-stick pan, wooden spatula.

14. Jaggery: 150 grams.

15. Millet rotis: 8 pieces.

  • How to make:

1. First of all, roast the green turmeric in ghee in a non-stick pan. For that, take 200 ml ghee, keep it on low heat, once it gets hot, add the green turmeric, keep stirring continuously. Check after 12-15 minutes. The turmeric should not taste bitter!!!The color of the turmeric will turn dark, after which the ghee will release as the turmeric is roasted.so understand that the turmeric is roasted. Remove the turmeric in a separate vessel.

2. Meanwhile, take water in a pan, add peas in it and put it on the gas. Bring to a boil. Then put the pan aside. The peas will boil.

3. Now, take 100-150 grams of ghee in a pan, fry cumin seeds and tamal leaves/sweet neem. And add all the green garlic and let it fry. At that time add some turmeric powder. After 90 percent of the garlic is cooked, add ginger chili paste. And let it fry.Add finely chopped tomatoes. We will not use dried onions here as they will cut the taste of the green garlic.

4. Once it is cooked, add boiled peas, salt, chilli powder, coriander powder, pepper powder (add separately). And mix.

5. Then, reduce the heat, add garam masala and yogurt as required. Switch off the gas. Mix.

6.Add finely chopped green coriander, serve with millet rotis, jaggery (if required) and buttermilk.

Piperine is the main alkaloid (alkaloids are naturally occurring organic compounds commonly found in plants) present in pepper (especially black pepper - Piper nigrum) which is responsible for its pungent taste.

This is a natural compound that has been used for centuries in Ayurveda and other traditional medicine systems.

  • Main features and uses:

Taste: Gives pepper its pungency.

Bio availability Enhancer: This is the most notable property of piperine. It helps in increasing the absorption of other nutrients and drugs in the body, making them more effective. For example, it is known to significantly increase the absorption of curcumin from turmeric.

  • Medicinal properties: Studies suggest that it may have the following properties:

·         Anti-inflammatory

·         Stimulates digestion Effects on the nervous system

 

Curcumin has poor bio availability. To improve its absorption, it is often recommended to take it with piperine, which is found in black pepper.
